Hi, my name is Matt Wakelin. After 24 years in the business of home-delivering the highest quality meats and seafood, I’ve come to learn so much about what to supply to my customers. Although I have a great discerning ability to to taste and tell what is a good product or what brand is better than another, it has been the feedback of the thousands of loyal customers I have serviced over the years that has determined what works the best. I’ve developed long-term relationships with four of the top restaurant suppliers in the country. Sysco and US Foodservice — both located in Clifton Park, NY — are my two main suppliers.
I am using the Stockyard beef lamb and pork program through US Foodservice, which is processed in Buffalo, NY. Their high-end black angus program provides the highest-graded choice available, along with the prime steak program. Stockyard has been cutting meat for more than 100 years. They supply some of the most famous and reputable steak houses across the country. All my steaks are wet-aged for ultimate tenderness and flavor. I also have some dry-aged steaks that have been aged for a minimum of 21 days. In addition, the prime pork program Stockyard offers is unsurpassed in terms of food technology. They have a way of processing the pork so it is so tender, juicy and perfect for the grill.
My antibiotic and hormone-free meats come from Dole & Bailey out of Boston. All the meats from there are raised by small to medium range farms throughout the Northeast and the State of New York. The farmers have strict, upscale guidelines to follow to qualify for this program. The animals are treated humanely and with a sustainable process.
My products or portion controlled which means there is no waste or leftovers regardless of whether you’re serving a large crowd or just one or two people. Many of my products can be baked or pan fried or quickly prepared — perfect for busy people!
